This is the product of idle curiosity more than anything else - is it possible to make something approximating Black Pudding (British blood sausage), but in a form that contains no animal products at all?
Here's the (sort of) recipe:
Ingredients for this experiment were:
Half a colander of fresh stinging nettle tops - probably about 75g dry weight
A small bunch of fresh parsley (I used Ground Elder as a substitute)
2.5 cups rolled oats
About 4 or 5 tablespoons of peeled wheat (or pearl barley, or rice)
1 small onion
About 150g cooked beetroot (not the vinegared kind)
About 100g silken tofu
Vegetable fat and a little flour for the wrapping process
The spice mix:
0.5 teaspoon salt
0.5 teaspoon mixed ground spice (which is a blend of cinnamon, cloves, allspice, ginger)
A small pinch of ground cumin
1 level teaspoon black pepper
1 teaspoon ground nutmeg
(The pepper and nutmeg are the two most important spices in the recipe, as their flavours are distinctive in sausages and black pudding)
1 heaped teaspoon dried mixed herbs (which is a blend of thyme, rosemary, sage, oregano etc)
Boil the peeled wheat until soft
Boil the nettles for about 3 minutes until they wilt
Blend the cooked nettles with the beetroot and tofu, then add two cups of the oats, plus the spice mix, and blend to a smooth consistency
Remove the mixture to a bowl and mix in the chopped onion, the cooked peeled wheat and the remainder of the oats
Cover and leave for an hour in the fridge
Knead the mixture into a thick sausage shape, wrap in greased baking parchment - twist and tie the ends tight, then wrap the paper packages in foil
Steam over boiling water for an hour
Leave to cool completely - overnight if possible.
Remove the foil, slice into 1cm sections, carefully peel off the paper and fry the slices in vegetable oil until they begin to turn golden brown
Serve as part of a cooked breakfast (so if serving to vegetarians, maybe accompanied by beans or cooked tomatoes, plus toast or bread. If serving to non-vegetarians, bacon is nice!)
